Persimmons are a beautiful fruit that looks like a yellowish-orange tomato, and are available in late fall and winter. They are tangy and sweet, somewhere between a mango and peach. We paired them with the creamy texture of blue cheese and salty flavor of prosciutto and drizzled with spicy honey! YUM. A simple app to serve during the holidays.

Ingredients

  • 2 persimmons, cut into bite size pieces

  • 4-6 slices of prosciutto, cut into bite size pieces

  • 4 ounces of blue cheese, cut into bite size pieces

  • 2 Tbsp. of hot honey ( we used Mike’s Hot Honey)

  • Ground pepper

  • 20 toothpicks

Directions

  • Starting with bite size persimmons, place on serving platter. Add prosciutto and blue cheese on top of each piece of persimmon. Use a toothpick to keep it together.
  • Drizzle with hot honey and pepper.

Tips and nutritional value (healthline & Joy Bauer)

  • 1. Persimmons are originally from china and known for their sweet, honey flavor. Persimmons are an excellent source of vitamin A and magnesium. They also contain antioxidants and tannins which help reduce blood pressure and inflammation.
