Brussels Sprouts and Pomegranate Crostini

minutesThis appetizer is perfect for the holidays. Your guests will enjoy the combination of garlicky charred brussels sprouts, creamy truffle burrata and tart crunchy pomegranate.
Ingredients
1 baguette cut into 12-14 slices
4 Tbsp. of olive oil, divided
10 ounces of shredded brussels sprouts (We used Trader Joe’s pre shredded)
2 cloves of garlic, minced
1 Tbsp. kosher salt
8-10 ounces of truffle burrata (we used Trader Joe’s)
1 Tbsp. of crushed red pepper flakes (optional)
2 ounces of fresh pomegranate arils
Directions
- Preheat oven to 350 degrees. Place baguette slices in a single layer on a baking sheet.
- Brush baguette slices with olive oil on both sides. Bake in oven for 5-7 minutes or until slightly toasted.
- In a medium size saute pan, add 2 Tbsp. of olive oil and allow to warm up. Add minced garlic and continue to cook for 1-2 minutes. Add brussels sprouts and cook for 8-10 minutes, or until charred tossing frequently.
- Place toasted baguette on a platter and top with burrata, brussels sprouts, pomegranates, crushed red pepper. Drizzle with olive oil.

- 2. Pomegranates are another delicious superfood that you should add to your diet. They can be intimidating at first but once you break through the tough skin you will find sweet-tart seeds inside that are packed with antioxidants and nutrients. We recommend cutting them open in water. Pre-seeded pomegranates work just as well, however we recommend buying the whole pomegranate because it is fresher!
