Roasted Brussels Sprouts with Hot Honey and Balsamic Glaze

minutesBrussels Sprouts definitely have made a come back and are even getting better. Although brussels are available year round, they are in peak season during the late fall, winter season, which makes them a perfect choice for a holiday side dish. Add some pancetta, blue cheese and dried cranberries to make them extra special.
Ingredients
2 lbs. of brussels sprouts, halved
4 ounces of diced pancetta
3 Tbsp. of extra virgin olive oil
1 tsp. of kosher salt
Fresh ground pepper to taste
2 Tbsp. of balsamic glaze, available in most grocery stores
3 Tbsp. of hot honey, we use Mike’s Hot Honey*
1/3 cup of diced dried cranberries
2 ounces of gorgonzola cheese, crumbled
Directions
- Preheat oven to 425 degrees.
- On a parchment lined baking sheet, toss together brussels, olive oil, pepper, salt, pancetta. Lay brussels cut side down. Roast for approximately 20 minutes or until crispy brown.
- While the brussels are roasting, in a small microwaveable bowl, add balsamic glaze, and hot honey, mix to combine and heat for about 30-40 seconds or until bubbling.
- Remove brussels from the oven and drizzle the honey mixture over the brussels sprouts. Transfer to serving platter and top with the cheese and cranberries.
