We all love a warm bowl of soup when the temperatures are chilly. This traditional soup is filled with vegetables, tender pork meatballs, spinach and pasta. This healthy and simple soup will quickly become a family favorite.

Ingredients

  • Meatballs
  • 1 lb. ground pork

  • 1 large egg, lightly beaten

  • 1/2 cup of bread crumbs

  • 1/2 cup of fresh grated parmesan cheese

  • 1 teaspoon of minced onion

  • 1 teaspoon of minced garlic

  • 1 Tbsp. of Worcestershire sauce

  • Kosher salt and freshly ground pepper

  • For the Soup
  • 12 cups of chicken broth

  • 2 Tbsp. of olive oil

  • 2 carrots cut into 1/4 inch pieces

  • 1 small onion, diced

  • 12 ounces of fresh baby spinach, broken into small pieces

  • 2 large eggs

  • 2 Tbsp. of fresh grated parmesan cheese

  • Kosher salt and fresh ground pepper

  • 1 cup of acini di pepe pasta

Directions

  • For the Meatballs
  • Combine all meatball ingredients in a large bowl and gently mix. Using a teaspoon, shape the meat mixture into 1 inch meatballs, set aside.
  • For the Soup
  • In a large pot, heat the olive oil over medium-low heat. Add carrots and onion and saute until softened, about 5-10 minutes, stirring occasionally.
  • Add chicken stock and bring to a boil. Add meatballs and simmer until they are cooked, about 8-10 minutes. Add pasta and continue to cook for 6-8 minutes, until pasta is tender.
  • Whisk eggs and parmesan cheese in a small bowl to blend. Stir the soup in a circular motion and gradually drizzle the egg mixture into the broth forming thin strands of egg. Add fresh spinach and cook for an additional 1-2 minutes, until spinach is wilted. Taste for salt and pepper.
