Roasted Cinnamon Delicata Squash with Burrata and Toasted Hazelnuts

Delicata Squash is a fall/ winter squash that is creamy and sweet with a tender, eatable rind. It is our favorite type of squash and definitely deserves more attention. This version includes burrata cheese, hazelnuts, red onions, cranberries and is drizzled with brown butter and sage. It is sweet and salty and so so good!

Ingredients

  • For the Squash
  • 2 medium size Delicata Squash, cut in half lengthwise, deseed and cut into 1/2 inch slices

  • 1 red onion, cut into thick slices

  • 2 Tbsp. olive oil

  • 1 tsp. of cinnamon

  • 1/4 cup of hazelnuts, (we used Trader Joe’s Dry Roasted & Unsalted Oregon Hazelnuts)

  • 1/4 – 1/2 cup of dried cranberries, (we used Trader Joe’s)

  • One 4 ounce Burrata ball, broken into pieces. (we used Bel Gloloso Burrata with Black Truffles)

  • Kosher salt and freshly ground pepper to taste

  • 6-8 fresh sage leaves (garnish)

  • For the Butter Sauce
  • 3 Tbsp. of butter, (we used Trader Joe’s cultured Salted Butter)

  • 2 Tbsp. of olive oil

  • 10-12 fresh sage leaves

  • Juice from 1/2 a lemon

Directions

  • For the Squash
  • Preheat oven to 425 degrees.
  • Line two baking sheets with parchment paper. On one of them, place cut squash in a single layer. On the other baking sheet, place the red onion. Brush the squash and red onion with olive oil and sprinkle with salt. Sprinkle cinnamon on to of squash. Roast for 10 minutes. Flip vegetables over and roast for additional 10 minutes or until caramelized and tender.
  • While the vegetables are roasting, chop the hazelnuts and toast them in a medium size skillet over medium heat for about 5-10 minutes, stirring them occasionally. Add a sprinkle of salt.
  • Place roasted vegetables on a platter. Add hazelnuts, dried cranberries and burrata on top of vegetables, and drizzle with butter sauce. (see directions below).
  • For the Butter Sauce
  • In a medium size frying pan, melt butter over medium heat. As the butter melts it will begin to foam. Continue to cook, stirring occasionally until the color changes to a toasty brown color, about 6-8 minutes.
  • Add dry sage leaves to the pan and cook until they crisp up, about 15 seconds. Then stir in olive oil and lemon juice.

Tips and nutritional value
