Blackened Shrimp Avocado and Mango Lettuce Wraps

Simple, healthy and tasty! This quick summer meal is so flavorful with the fresh shrimp, creamy avocado and sweet mango. A great alternative to traditional tacos and you don’t miss the tortilla shell or heavy sauce.

Ingredients

  • 1lb. of shrimp, peeled and deveined (we use Trader Joe’s Argentinian Red Shrimp)

  • 1 Tbsp. of blackening seasoning (we use old bay)

  • 2 Tbsp. of olive oil

  • 2 cloves of fresh garlic, minced

  • 1 avocado, diced

  • 1 mango, diced

  • 1 celery stalk, chopped

  • 1/2 cup of cherry tomatoes, sliced

  • 4 ounces of queso cheese

  • 2 Tbsp of fresh cilantro

  • 6 butter lettuce leaves*

  • Juice of 1 lime

  • Kosher salt and fresh ground pepper to taste

Directions

  • In a large bowl, toss shrimp with blackening seasoning until each one is coated. Set aside for 30 minutes to marinate.
  • Heat oil in a large skillet, add minced garlic, and saute for 1-2 minutes. Add the shrimp in one layer. Cook for 2 minutes, then cut into bite size pieces and flip and cook for an additional 2 minutes.
  • Lay out lettuce leaves. Layer shrimp, avocado, mango, celery, tomatoes. queso cheese and cilantro. Squeeze lime juice on top of each.
