Buffalo Chicken Meatballs and Blue Cheese on a Stick

It’s Super Bowl time, which means it’s buffalo chicken time!  Here is an impressive and delicious recipe to make for the game…plus we always love snacks on a stick!!  This recipe is also a healthier version of chicken wings.  So you get to eat more!!

Ingredients

  • 1 lb. of ground chicken

  • 1/2 lb. of fresh chicken sausage, removed from casings  (we used Trader Joes’s Sun-dried Tomato Basil flavored)

  • 1 large egg, lightly beaten

  • 3/4 cup of panko bread crumbs

  • 1 cup of buffalo sauce, divided ( We used Wegmans Buffalo Sauce)

  • 1/2 cup of parmesan cheese

  • 1 tsp. of garlic powder

  • 1 tsp. of onion powder ( We used Trader Joe’s)

  • 1 tsp. of kosher salt

  • 1 tsp. of freshly ground pepper

  • One 7-8 ounce package of blue cheese

  • 1 bunch of chives, chopped (optional)

  • 3-4 inch wooden skewers (24-30 count)

Directions

  • Preheat oven to 350 degrees
  • Cut blue cheese into bite size chunks. Allow the blue cheese to come to room temperature so cheese is soft and won’t crack when you put on skewer.
  • For the meatballs, place egg, ground chicken, sausage, bread crumbs, 1/4 cup of buffalo sauce, parmesan cheese, garlic and onion powder, salt and pepper in a large bowl and gently combine.
  • Using your hands, form the mixture into 1 inch to 1 1/4 inch meatballs and place onto a baking sheet lined with parchment paper. Bake for approximately 30 minutes, until cooked and slightly browned.
  • Warm remaining buffalo sauce in a medium pan, add cooked meatballs to coat in sauce.
  • Remove meatballs. Gently add blue cheese chunks to skewers and add meatballs.  Sprinkle with chopped chives.
