Spicy Honey Grilled Chicken and Pineapple Skewers

Grilled chicken and fruit skewers are a classic summer meal. This version included a honey based marinade blended with chile sauce and fresh orange juice. A perfect combination.

Ingredients

  • Marinade
  • 1/3 cup of olive oil

  • 1/2 cup of honey

  • 2 Tbsp. of Asian chile sauce (we use Gochujang brand)

  • 2 Tbsp. of champagne vinegar

  • 2 Tbsp. of low sodium soy sauce

  • 2 Tbsp. of fresh orange juice

  • 4 cloves of fresh garlic, minced

  • 1 Tbsp. of fresh rosemary, chopped

  • Kosher salt and fresh pepper to taste

  • Skewers
  • 1 lb. of boneless skinless chicken breasts, cut into 1 inch pieces

  • 1 red bell pepper, cut into 1 inch pieces

  • 1 yellow bell pepper, cut into 1 inch pieces

  • 1 orange bell pepper, cut into 1 inch pieces

  • 1 red onion, cut into 1 inch pieces

  • 1 pineapple, cut into 1 inch pieces

  • 8″ wooden skewers (15-20)*

Directions

  • Marinade
  • In a medium size bowl, whisk together oil, honey, chile sauce, vinegar, soy sauce, orange juice, garlic, rosemary, salt and pepper until combined.
  • Reserve a 1/4 cup for basting.
  • Skewers
  • Add cut chicken into a large baggie. Pour marinade into the baggie and marinate chicken for at least 30 minutes in the fridge.
  • Thread the chicken, peppers, red onion and pineapple onto the skewers.
  • Lightly oil the grill grate. Place the skewers on the grill. Cook, turning and basting with reserved marinade for approximately 10-12 minutes.

Tips and serving suggestion

  • 1. Soak skewers in water for 30-60 minutes before using to keep them from burning.
  • 2. Serve with coconut rice.
