Mini Blueberry Scones

minutesIt’s almost summer which means it’s blueberry season! These delicious treats are flaky, buttery, full of blueberries and a hint of lemon and cinnamon. Perfect with a cup of coffee.
Ingredients
2 cups of all-purpose flour
1 Tbsp. of baking powder
1/2 tsp. of salt
5 Tbsp. of sugar, divided
1 Tbsp. of lemon zest
1/2 tsp. of cinnamon
5 Tbsp. of cold butter, cut into chunks
1 cup of heavy cream, plus more for brushing the scones
1 cup of fresh blueberries
Directions
- preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, baking powder, salt, 4 Tbsp. of sugar and lemon zest.
- With a fork or pastry blender, cut the cold butter and add into the flour mixture.
- Make a well in the middle of the flour mixture and pour in the heavy cream. Fold the mixture just to combine, then gently fold in blueberries into the batter. Do not over work the dough.
- On a lightly floured surface, press the dough into a 12″ by 3″ rectangle. Cut the rectangle in half, then cut the two halves in half. Cut the four pieces in half one more time and then cut each piece on a diagonal to create 16 triangle shapes.
- Place the scones on a baking sheet. Brush them with heavy cream and sprinkle with 1 Tbsp. of sugar.
- Bake for 15-20 minutes or until golden brown.
