Zucchini Noodles with Lemon Oil and Roasted Tomatoes

Zoodles are getting a lot of attention recently. They are healthy (low carb) spirals of deliciousness and can be substituted for pasta or simply used for a side dish.

Ingredients

  • Two 12 ounce package of zucchini spirals

  • 2 Tbsp. of lemon extra virgin olive oil ( we use wegmans)

  • 1 cup of cherrry tomatoes, halved

  • 4 cloves of garlic, minced

  • 1 shallot, minced

  • 1/4 cup of parmesan cheese

  • 1/4 cup of fresh basil leaves, thinly sliced

  • Kosher salt and ground pepper to taste

Directions

  • Heat large skillet on medium high heat. Add 1 Tbsp. of oil and add zucchini noodles. Cook for about 2 minutes or until water is released.
  • Remove noodles from heat and place in a colander to drain additional water. Remove any water from skillet as well.
  • In same skillet, add remaining olive oil, garlic, shallot, tomatoes, salt and pepper. Cook for 1-2 minutes until tomatoes start to soften. Add zucchini noodles back into pan. Season with salt and pepper to taste.
  • Cook for additional minute just t o warm zucchini noodles up. Add parmesan cheese and basil. Toss gently until combined.

  • 1. Fun fact.. although zucchini is often considered a vegetable , it is botanically classified as a fruit.
  • 2. Zucchini is high in antioxidants and contains many vitamins and minerals, particularly high in vitamin A, which supports vision and immune system.
