Citrus Salad with Honey Vinaigrette

minutesWe are craving a healthy delicious salad after all of the Super Bowl treats! Plus it’s citrus season…the best time of the year to use citrus fruit.
Ingredients
- For the Salad
5-6 ounce bag of mixed greens
2 medium blood oranges, peeled and cut into 1/2 inch rounds*
1 avocado, sliced and salted
1/2 cup of pomegranate seeds
2-3 ounces if crumbled goat cheese
1/2 cup of roasted chick peas **
- For Dressing
2 Tbsp. of champagne vinegar (we used Trader Joe’s Orange Muscat Champagne Vinegar)
1 Tbsp. of honey
1/4 cup of olive oil
Kosher salt and freshly ground pepper to taste
Directions
- Add greens to serving platter and layer remaining ingredients.
- Combine the dressing ingredients in a small jar. Close the lid tightly and shake well to combine.
- Drizzle salad lightly with with dressing. Serve remaining dressing on the side.

- 1. *The best technique for peeling the orange in order to remove the white membrane is to first slice off the top and bottom of the orange. Then with a sharp paring knife, cut arcs of the rind off, going from top to bottom.
- 2. **We used Wegmans Chickpea Sea Salt Snacks. But you can also roast your own chick peas ( see our Lemony Grain and Kale Salad).
- 3. Citrus fruits not only taste good but they have many health benefits, from boosting immunity to helping fight cancer. They are an excellent source of vitamin C which helps us fight the common cold and keeps our skin smooth and bright. Studies have found that citrus also benefits heart health and boost brain function.
- 4. You can always add a protein to this salad to make it more of a meal!
