Pumpkin Hummus

minutesHappy Halloween!!! Here’s a festive and delicious recipe to serve if you are having a Halloween party or a healthy, simple snack for your family before they start trick-or-treating. You can also serve this for Thanksgiving, just eliminate the scary spider web!
Ingredients
One 15 ounce can of pureed pumpkin
One 15 ounce can of northern white beans, drained
2 Tbsp. of tahini (we like Trader Joe’s)
2 Tbsp. of lemon juice
1 clove of garlic, minced
1 tsp. of kosher salt (plus more to taste)
1/2 tsp. of ground cumin
1/2 tsp. of smoked paprika
1 Tbsp. of pumpkin spice seasoning
1 Tbsp. of chili paste
1/4 cup of olive oil
2 Tbsp. of sour cream (for spider web)
Directions
- In a food processor, add pureed pumpkin, white beans, tahini, lemon juice, garlic, salt, cumin, smoked paprika, pumpkin spice and chili paste. Blend until creamy.
- While running the food processor, stream in olive oil. Add more salt if needed.
- Spread hummus into a bowl.
- If creating the spider web, spoon sour cream into a small baggie. Snip off a tiny part of the corner of the baggie. Pipe sour cream in 3 or 4 concentric circles. Drag a toothpick through the sour cream from the center outward to make spider web design. Repeat 4-5 times.
- Serve with vegetables and/or chips.*

- 2. You can substitute store bought hummus if you are short on time.
- 3. If you are not making the spider web design, top hummus with pumpkin seeds and small sage leaves.
- 4. Don’t forget we learned from the pumpkin chili recipe that pumpkin contains Vitamins A and C, carotenoids (lowering risks of some cancers), beta-carotene (natural sunblock), and it’s low in calories!
