Ingredients
1/4 cup of ancho chile powder
1/2 cup of brown sugar
1/4 cup of salt
2 Tbsp. of fresh ground pepper
3 Tbsp. of smoked paprika
1 Tbsp. of ground cumin
1 Tbsp. of garlic powder
1 Tbsp. of onion powder
1 tsp. of dry mustard
1 tsp. of ground cayenne pepper
2 cups of BBQ sauce (we used Trader Joes Sriracha and Roasted Garlic BBQ Sauce)
2 racks of baby back ribs
Directions
- Preheat oven to 250 degrees.
- Mix ancho chile pepper, brown sugar, smoked paprika, salt, pepper, cumin, garlic powder, onion powder, dry mustard and cayenne pepper in a small bowl until combined.
- Peel off tough membrane that covers the underside/boney side of the rack. Generously apply dry rub to all sides of rack.
- Place ribs meat-side down on foil-covered sheet pan. Fold foil around the ribs to create a tight seal. Bake for 2 hours. Remove and cool for 15 minutes.
- Open foil and carefully drain any accumulated juices. Brush BBQ sauce on both sides of the rack.
- Place rack meat side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of sauce on meat-side only. Repeat baking and brushing with sauce three more times, for a total of 40 minutes or until a knife slides easily into the thickest part of the rib.
- Cut rack into rib pieces and serve with more sauce if needed.
Tips and Serving Suggestions
- 1. Ribs can be completely pre-made two days ahead and reheated on a low temperature grill or oven for approximately 30 minutes. Add more sauce if needed.Â
- 2. Serve with cold beer!!
