Olive Oil Smashed Garlic Potatoes

minutesThis recipe is not only healthier than traditional mashed potatoes, but it is easier! The more lumps the better!
Ingredients
2 lbs. of small Yukon Gold potatoes *
2 cloves of fresh garlic, minced
3/4 cup of extra-virgin olive oil
1 Tbsp. of kosher salt
1/2 Tbsp. of fresh ground pepper
Fresh rosemary (optional)
Directions
- Wash and cut potatoes in half (leave skin on). Place potatoes in large saucepan, cover with salted cold water and bring to a boil. Cook until tender, about 15 minutes. Drain potatoes and return to saucepan. Smash the potatoes with a fork or potato masher.
- Add minced garlic and olive oil (1/4 cup at a time). Fold into potatoes. Season with pepper and extra salt if needed.
- Garnish with rosemary.
