Barbecue Salmon Tacos with Pineapple Salsa

Any day is “Taco Day”…not just Tuesdays!! We truly love tacos! They are a fast and delicious weeknight meal. This combination is a healthy and flavorful balance. Plus, the corn tortillas make it gluten free!

Ingredients

  • 2 fresh salmon fillets (6-8 ounces or 1/2 lb.)

  • 1/2 cup of barbecue sauce (we use Trader Joe’s)

  • 8 corn tortillas

  • 1 1/2 cups of prepared slaw mix (we use Trader Joe’s)

  • 1 cup of pineapple salsa (see recipe below)

  • 1 cup of lime crema sauce* (see recipe below)

  • 1/2 cup of chopped fresh cilantro

  • Pineapple Salsa
  • 2 cup of chopped fresh pineapple

  • 1/2 cup of red onion, diced

  • 1 jalapeno pepper, seeded and diced

  • 1/2 cup of chopped fresh cilantro

  • Juice from 1 fresh lime

  • Lime Crema
  • 8 ounces of sour cream

  • Juice from 1 fresh lime

  • 1 clove of fresh garlic, minced

  • 1/4 tsp. of salt

Directions

  • Preheat oven to 400 degrees.
  • Place salmon skin side down in the middle of a foil lined baking sheet.
  • Sprinkle salmon with salt and pepper and spread barbecue sauce on top to cover.
  • Bake for 20 minutes or until salmon is cooked (145 degrees).
  • Flake salmon into pieces. Add more barbecue sauce if desired.
  • Wrap a stack of tortillas in a packet of aluminum foil and put in oven for approximately 10 minutes to soften.
  • Combine all pineapple salsa ingredients in a bowl.
  • Combine all lime crema ingredients in a bowl.
  • To assemble tacos, fill each tortilla with slaw, add salmon and prepared pineapple salsa, top with lime crema and cilantro.

  • 1. * Prepared bottled dressing can be used instead of making crema. We love Bolthouse Farms Salsa Verde Avocado Yogurt dressing.
  • 2. To keep extra already assembled tacos warm, wrap entirely in foil keep in oven on low heat (175 degrees)
  • 3. Serve with our Lemony Grain and Kale Salad.
  • 4. Like we have mentioned before, Salmon is a fantastic source of Omega-3 fatty acids and protein (22 grams per serving). This reduces inflammation and keeps your belly full!
