Summer Salad with Grilled Chicken and Cilantro-Lime Dressing

minutesSalads are honestly one of our favorite meals in the summer. It is a great way to use the season’s fresh produce. Plus, in this recipe we use left-over grilled chicken made the night before. Win Win!!
Ingredients
8 ounces of mixed greens
2 cooked chicken breasts, diced
2 peaches, diced
2 kirby cucumbers, sliced
1 avocado, diced
2 cups of sliced cherry tomatoes (we love tomatoes)
1/2 cup of pistachios
4 ounces of crumbled goat cheese
kosher salt and fresh ground pepper
- Cilantro-Lime Dressing
1 bunch of cilantro (about 2 cups)*
1/2 cup of olive oil
1/4 cup of lime juice
1/4 cup of orange juice
2 cloves of minced garlic
Directions
- Combine all ingredients in a large bowl.
- Cilantro-Lime Dressing
- Add all ingredients to a small food processor and blend until combined. Season with more salt if needed.
- Drizzle over prepared salad or serve on the side.
Tips
- 1. Make sure to wash and dry cilantro well before using.
- 2. * You can use both the cilantro leaves and stems since the stems are soft enough to blend easily. Just break away leaves from long stems.
