Summer Salad with Grilled Chicken and Cilantro-Lime Dressing

Salads are honestly one of our favorite meals in the summer. It is a great way to use the season’s fresh produce. Plus, in this recipe we use left-over grilled chicken made the night before. Win Win!!

Ingredients

  • 8 ounces of mixed greens

  • 2 cooked chicken breasts, diced

  • 2 peaches, diced

  • 2 kirby cucumbers, sliced

  • 1 avocado, diced

  • 2 cups of sliced cherry tomatoes (we love tomatoes)

  • 1/2 cup of pistachios

  • 4 ounces of crumbled goat cheese

  • kosher salt and fresh ground pepper

  • Cilantro-Lime Dressing
  • 1 bunch of cilantro (about 2 cups)*

  • 1/2 cup of olive oil

  • 1/4 cup of lime juice

  • 1/4 cup of orange juice

  • 2 cloves of minced garlic

Directions

  • Combine all ingredients in a large bowl.
  • Cilantro-Lime Dressing
  • Add all ingredients to a small food processor and blend until combined. Season with more salt if needed.
  • Drizzle over prepared salad or serve on the side.

Tips

  • 1. Make sure to wash and dry cilantro well before using.
  • 2. * You can use both the cilantro leaves and stems since the stems are soft enough to blend easily. Just break away leaves from long stems.
