Just yummy and easy!

Ingredients

  • 1 1/2 lbs. of red baby potatoes, rinsed and drained

  • 4 Tbsp. of olive oil

  • 4 cloves of fresh minced garlic

  • 2 Tbsp. of grated parmesan cheese

  • 1/2 tsp. of kosher salt

  • Fresh ground pepper

  • 2 Tbsp. of finely chopped fresh parsley, chives or thyme

Directions

  • Preheat oven to 400 degrees
  • Lightly oil a baking sheet with nonstick spray.
  • Cut potatoes in half and place onto baking sheet. Add olive oil, garlic, parmesan cheese, salt and pepper on top of potatoes and gently toss to combine.
  • Bake in oven for 30-40 minutes or until golden brown, tossing occasionally. Garnish with fresh herbs.

  • If potatoes seem dry just drizzle with more olive oil.
  • When potatoes are not fried and loaded with a lot of butter or cheese, they can actually be good for you! Potatoes are a great source of Vitamin C and Potassium.
  • Red and purple skinned potatoes have two to three times more potential of antioxidants than white potatoes.
