Fresh Berries and Avocado Summer Salad with Balsamic Dressing

So easy, so healthy and so pretty! The presentation and flavor will impress your guests. You can also get all of these items from your local Trader Joe’s!

Ingredients

  • 16 ounces of mixed greens (we used Trader Joe’s Herb Salad Mix)

  • 1 pint of fresh slices strawberries

  • 1 cup fresh blueberries

  •  1 diced avocado

  • 1 cup of roasted pecans or walnuts (we used Trader Joe’s Roasted and Salted Pecan Halves)

  • 8 ounces crumbled goat cheese (we used Blueberry Vanilla Chevre from Trader Joe’s)*

  • For the Dressing**
  • ½ cup of light olive oil

  • ¼ Tbsp. of balsamic vinegar

  • 2 Tbsp. of honey

  •  ½ tsp. of kosher salt

  • ½ tsp. of freshly ground pepper

Directions

  • Add greens to bottom of serving platter and then layer remaining ingredients on top of greens in circular pattern.
  •  Combine the dressing ingredients in a small jar. Close the lid tightly and shake well to combine.
  • Drizzle salad lightly with dressing. (Serve remaining dressing on the side)

Tips and Nutritional Value

  • 1.    *Try using Trader Joes Blueberry Vanilla Goat Cheese. It’s super good and perfect in this recipe!
    2.    Omit the avocado and it becomes a “red, white and blue” patriotic salad.
    3.    Serve with grilled chicken and a glass of rosé!
  • 4. ** If you do not want to make your own dressing we recommend Trader Joe’s Balsamic and Fig Dressing!
  • 5.    Blueberries are a super fruit- highest antioxidant fruit and an excellent source of Vitamin C and Vitamin K. Blueberries are also a source of brain food- they will help us remember!
