These Ice Cream Sandwiches might look and seem complicated but they are so simple and so decadent. The flavor varieties are endless depending on your favorite ice cream. They are the perfect summer treat!

  • Follow the directions for our flourless brownie recipe: Flourless Chocolate Brownies with Cinnamon
  • Instead of baking the batter all together we separated the batter in half and baked in two 8×8 pans. Also, line the bottom of the pans with parchment paper, leaving about 4″ of paper hanging over the sides.
  • Bake for approximately 15 minutes or until a toothpick inserted comes out barely clean.
  • Allow brownies to completely cool.
  • Thaw ice cream for 5-10 minutes. On one of the halves of the brownies, use a rubber spatula and spread the ice cream over the top.
  • On the other brownie half, peel off the parchment paper and place on top of the ice cream.
  • Cover with foil and freeze for at least 6 hours. Overnight is best.
  • When ready to cut, use the parchment to list the entire block out. Use a sharp knife to cut into 9 pieces.
