Potato Salad with Bacon and Gorgonzola Cheese

minutesWe made a couple of changes to the traditional summer potato salad recipe including no mayonnaise.. which means a lot healthier! Loaded with creamy gorgonzola and salty crispy bacon, this version will be your new favorite recipe!
Ingredients
6 slices of bacon
3 lbs of red potatoes, cut into bite sizes
1/2 cup of olive oil ( we used Bellecento)
3 Tbsp. of red wine vinegar
1 1/2 tsp. of kosher salt, divided
Freshly ground pepper to taste
4 ounces of crumbled gorgonzola cheese
4 green onions, chopped
Directions
- Preheat oven to 400 degrees.
- Place bacon on parchment lined baking sheet. Bake for approximately 20 minutes or until crispy. Drain on a paper towel, and cool and break into small pieces.
- Place potatoes in a large saucepan and cover with cold water. Add 1 tsp. of salt and bring to a boil cooking for 8-10 minutes or until tender.
- Drain the potatoes and add to large bowl.
- In a small bowl, whisk olive oil and vinegar, 1/2 tsp. of salt and pepper. Set aside.
- To the potatoes, add bacon, gorgonzola, and green onions. Pour olive oil over potatoes and gently toss.
- Serve warm or cold.
