Bacon Wrapped Hot Honey Glazed Carrots

minutesThis recipe is perfect anytime of the year but during late/early summer carrots are fresh, sweet and tender and can be found at your local farmers market. They can be served as an appetizer or a side dish. Plus … they are wrapped in bacon!
Ingredients
1 lb. of fresh carrots (we used multi-colored)
1/2 lb of thin-sliced bacon
1/4 cup of mike’s hot honey *
1 Tbsp. of fresh thyme
Directions
- Preheat oven to 400 degrees.
- Place uncooked bacon on a baking sheet and cook for about 7 minutes. Place bacon on paper towel to drain before wrapping around carrots.
- Once cooled, wrap slice of bacon around each carrot, starting at the thick end of the carrot.
- Spray wire rack with cooking spray and place carrots on rack.
- Bake for 20-25 minutes or until carrots are tender and bacon is crispy.
- Remove from oven and brush hot honey on all sides. Bake for additional 5 minutes.
- Toss with fresh thyme.
