Watermelon, Berry and Cucumber Salad

minutesA beautiful and refreshing salad with impressive health benefits too! We used a star shaped cookie cutter to create a fun shape that will be sure to impress your guests. Perfect for patriotic celebrations.
Ingredients
- For salad
1/2 medium seedless watermelon
2 cups of blueberries
1 cup of blackberries
1 cup of raspberries
2 cups of strawberries, sliced
2 cups of cucumbers, sliced
One 8 ounce package of block feta, cut into 1/2 inch pieces
8-10 fresh basil leaves, thinly sliced
Small star-shaped cookie cutter
- For vinaigrette
1/4 cup olive oil ( we used Bellecento)
2 Tbsp. of white balsamic vinegar
Juice of 1/2 lemon
Zest of 1/2 lemon
1 Tbsp. of honey
1/4 tsp. of salt and freshly ground pepper to taste
1 Tbsp. of fresh mint chopped
Directions
- For salad
- Trim off the rind from the watermelon. Cut the watermelon into approximately 1/2 – 3/4 inch slices.
- Using the star cookie cutter, cut the watermelon slices into stars.
- Add watermelon, berries. cucumber, feta, and basil to large bowl.
- Toss with vinaigrette until evenly coated.
- For vinaigrette
- Whisk together all ingredients until combined.
