We love food on a stick!! Perfect for your family or summer entertaining.

Ingredients

  •  1 ½ – 2 lbs. skinless salmon fillet, cut into 1-inch pieces

  • 2 Tbsp. of fresh chopped oregano

  • 1 tsp. of kosher salt

  •  ½ tsp. fresh ground pepper

  • 1 tsp. of blackened old bay seasoning

  • 2 Tbsp. avocado oil (tolerates high heat best)

  • 3 lemons, very thinly cut into whole round slices (keep one whole to use as juice)

  • 16 bamboo skewers soaked in water for 1 hour prior to using

Directions

  • Prepare grill for medium heat. (Spray non-stick oil on grates)
  • In a small bowl, combine oregano, salt, pepper and oil.
  • Take 2 skewers and place parallel to each other, thread the salmon and folded lemon slices onto the parallel skewers to make a total of 8 kebabs. (Double skewering the salmon helps to flip the skewers while grilling)
  • Brush with oil mixture and season with old bay.
  • Grill, turning occasionally, 10-15 minutes.
  • Squeeze fresh lemon on top of the grilled skewered salmon
