Simple Greek Salad w/ Lemon Vinaigrette

minutesWe used our favorite Bellecento Olive oil to create a delicious and refreshing vinaigrette to go with a classic greek salad. So easy.. so yummy!
Ingredients
- Vinaigrette
1/4 cup of white balsamic vinegar
1 Tbsp. of dijon mustard
1 Tsp. of fresh thyme
1 clove of garlic, minced
2 Tbsp. of fresh lemon juice
1/2 tsp. of kosher salt
Freshly ground pepper to taste
1/2 cup of olive oil (we used Bellecento)
- Salad
One 9 ounce bag of chopped romaine lettuce
2-3 persian cucumbers, sliced (we used Trader Joe’s)
1 cup of cherry tomatoes, sliced (we used Trader Joe’s Heavenly Villagio Marzano Tomatoes)
1/2 red onion, sliced thin
8 ounce block of feta cheese, cut into cubes (we used Trader Joe’s)
Directions
- Vinaigrette
- In a small sealable jar, add all ingredients. Shake jar to combine until emulsified.
- Salad
- In a large salad bowl, combine all ingredients. Toss with vinaigrette.

- 1. Fun fact – a tomato is actually a fruit!! Tomatoes are a good source of many vitamins and antioxidants, including vitamin C and K, potassium and folate.
- 2. Cucumbers are also actually a fruit! They are high in water and low in calories, which makes them ideal for weight loss. - 4. Another fun fact!! Olives are small fruits that are called drupes or stone fruits. They are related to mangoes, cherries, almonds, peaches and pistachios. Studies show olives are good for the heart and may protect against osteoporosis and cancer.
