Roasted Asparagus with Cherry Tomatoes

Ingredients
2 lbs. of fresh asparagus
1 1/2 cups of tri-colored cherry tomatoes
2 tsp. of olive oil
2 cloves of minced garlic
1/2 cup of Parmesan cheese (divided into two 1/4 cups)
1/2 tsp.of kosher salt
Freshly ground pepper
Directions
- Preheat oven to 400 degrees.
- Snap the tough ends off of the asparagus and slice tomatoes in half.
- Toss vegetables in olive oil and minced garlic and place asparagus on roasting sheet with tomatoes on top. Add salt and pepper.
- Sprinkle with 1/4 cup of parmesan cheese.
- Roast for 15 minutes and sprinkle with remaining parmesan cheese.
