Hot Honey Glazed Cod with Citrus and Capers

minutesCitrus is in season during the winter months and we love to incorporate it into our recipes. Fresh citrus produces extreme sweet flavor. This healthy fish dish also includes spicy honey and a splash of soy sauce for extra flavor.
Ingredients
1 small grapefruit, cut into bite size pieces
1 cara cara orange, cut into bite size*
1/4 cup of red onion, finely chopped
1/2 poblano pepper, finely chopped
1/4 cup of capers
2 Tbsp. of cilantro, chopped
1/4 cup of fresh squeezed blood orange juice (about 1 small orange)
2-3 cloves of garlic, minced
2 Tbsp. of soy sauce
3 Tbsp. of hot honey (we used Mike’s Hot Honey)
Kosher salt and ground pepper to taste
1 Tbsp. of olive oil (we used Bellecento) **
4 (6 ounces) pieces of Cod***
Directions
- Mix grapefruit, orange, onion, pepper, capers and cilantro. Set aside.
- In a large pan or skillet add orange juice and cook for about a minute, allowing to slightly reduce. Add garlic, honey, soy sauce, salt and pepper. Bring to a simmer until reduced to a syrup consistency. Pour into small bowl or measuring cup.
- Heat oil in a pan on medium-high heat. Sear cod for 3-4 minutes on each side.
- Add syrup and cook for additional 1-2 minutes.
- Serve with citrus salsa.
Tips and NUTRITIONAL value
- 1. * We used Cara Cara oranges. They are beautiful and intensely sweet and also lower in acid.
- 2. ** Bellecento olive oil is so deliciously crafted with a combination of flavors including almond and artichokes.
- 3.*** Any white flakey fish or salmon would work in this recipe.
