Stuffed Cabbage Soup

minutesThis recipe has all the delicious flavors of stuffed cabbage but is so much easier. Plus we added kale for extra health benefits. This easy to make and warming soup can be made ahead of time and frozen for a later time.
Ingredients
2 Tbsp. of olive oil
1 lb of ground pork
1 tsp. of kosher salt and ground pepper to taste
1 small sweet onion, diced
2 large carrots, chopped
2 stalks of celery, chopped
4 cups of cabbage, chopped
3 cloves of garlic, minced
4 cups of vegetable stock
One 15 ounce can of tomato sauce
One 15 ounce can of petite diced tomatoes
2 Tbsp. of light brown sugar
1 Tbsp. of smoked paprika
1 Tbsp. of worcestershire sauce
1 tsp, of dried oregano
1 tsp. of dried thyme
3/4 cup of dry brown rice
1 1/2 cups of fresh kale,chopped
Directions
- In a large pot, heat olive oil. Add pork, salt and pepper, stirring and breaking up pork occasionally, until browned. 6 to 7 minutes.
- Add onion, carrots, celery, cabbage, cook about 5-7 minutes until vegetables are soft.
- Add garlic, and continue to cook for another minute.
- Add vegetable broth, tomato sauce, tomatoes, brown sugar, smoked paprika, worcestershire sauce, oregano and thyme.
- Bring soup to a boil. Stir in rice and kale. Reduce heat until low, cover and cook until rice is tender, about 20 minutes.
tips
- 1. Cabbage is low in calorie but high in vitamin C and antioxidants which can help reduce inflammation.
