Harvest Salad with Bourbon Vinaigrette

minutesAll the wonderful flavors of fall all in one salad and tossed with a hint of vanilla and caramel from the bourbon. This delicious and colorful salad will be a new tradition and perfect side dish for your Thanksgiving dinner.
Ingredients
- For the Salad
1 1/2 cups of Butternut squash, peeled and cut (we used Trader Joe’s)
2 Tbsp of olive oil
2 Tbsp. of maple syrup (we used Pure Vermont Maple Syrup)
1/2 tsp. of cinnamon
1/2 tsp. of kosher salt
1/2 tsp. of freshly ground pepper
1 apple, diced
1/2 cup dried cranberries
1 cup of cocktail tomatoes, cut in half
1/2 cup of pecans (we use Trader Joe’s roasted salted halves)
4 ounces of goat cheese cut into pieces, ( we used Trader Joe’s spiced pumpkin goat cheese)
7 ounces of mixed greens
- For Vinaigrette
1/2 cup of extra virgin olive oil
3 tsp. of white balsamic vinegar
1 tsp. of dijon mustard
1 Tbsp. of maple syrup
1 Tbsp. of fresh thyme
1 Tbsp. of bourbon
Directions
- For the Salad
- Preheat oven to 425 degrees.
- On a large rimmed baking sheet add butternut squash. Toss with olive oil, maple syrup, cinnamon, salt and pepper. Roast in oven for 20-25 minutes or until tender and lightly charred.
- In a large bowl, add lettuce, butternut squash, apple, cranberries, tomatoes, pecans and goat cheese.
- Toss with bourbon dressing
- For Vinaigrette
- In a small mixing bowl or mason jar, add all ingredients and mix or shake to combine.

- 1. Fun fact…squash is actually a fruit because it contains seeds and develops from the flower producing part of the plant. Butternut squash is an excellent source of Vitamin A, vitamin C, magnesium and potassium.
- 2. Apples are a good source of fiber, antioxidants and polyphenols. Studies found that apples help lower cholesterol and blood pressure. Just keep the skins on!
