Pineapple BBQ Sausage & Pepper Skewers

minutesDinner on a stick! During the summer months..the more we can put on the grill the better. This recipe requires a little pre-cooking before grilling, but overall is an easy delicious dinner for busy summer nights or entertaining.
Ingredients
2 lbs of spicy or mild sausage
1 can of beer
4 large peppers, cut into 1 inch pieces ( we used yellow, red and orange)
1 large red onion, cut into 1 inch pieces
1 lb. of small potatoes
1 lb. of fresh pineapple pieces
1 bunch of sage leaves
1 cup of BBQ sauce (we used Trader Joe’s Sweet Spicy Pineapple BBQ Sauce)
8-10 12″ wooden skewers
Directions
- Soak skewers in water for at least 1 hour prior to grilling. This will help prevent the skewers from burning up completely.
- Place sausage in a pot, add beer and enough water to cover the sausage one-two inches. Bring the water to a boil over medium heat, continue to cook for an additional 10 minutes. Allow to cool and slice into 1 inch pieces.
- Add small potatoes to medium pot, cover with water. Cook 12-15 minutes or until tender. Drain from water.
- Preheat outdoor grill for high heat and lightly oil the grates.
- Alternatively thread sausage, peppers, onion, potatoes, pineapple and sage leaves on skewers. Brush them generously with BBQ sauce. Cook on the grill for 3-4 minutes on each side or until veggies are lightly charred.
