What is better than pasta and cheese…. even if it’s veggie noodles! We made this recipe healthier by using zucchini and butternut squash spiral noodles. A quick and delicious recipe!

Ingredients

  • 12 oz. zucchini noodles (we used Wegmans frozen noodles)

  • 12 oz. butternut squash noodles (we used Wegmans frozen noodles)

  • 3 Tbsp. of butter

  • 1 tsp. of freshly cracked lemon pepper (we used Trader Joe’s)

  • 1/3 cup of grated parmesan cheese

  • 1/3 cup of grated pecorino romano cheese

Directions

  • Cook zucchini, butternut squash noodles in microwave according to package. Set aside.
  • In a large pan, melt butter. Add the lemon pepper and toast for 1-2 minutes.
  • Add zucchini and butternut squash noodles in to pan.
  • Toss gently with cheese.
