Lobster Salad with Endive

minutesLobster is a deletable summer indulgent that we enjoy as much as possible. This recipe includes a little bit of butter…which is sometimes the best part of eating lobster!
Ingredients
2 heads of Belgian endives, bottoms trimmed and leaves separated
12 ounces of chopped lobster meat (we used Trader Joe’s Langostino Tails)*
3 Tbsp. of butter
1/4 cup of mayonnaise
1/4 cup of celery, minced
1/4 cup of red onion, finely diced
1/2 of an avocado, cubed
1 Tbsp. of lemon juice
1/2 tsp. of old bay seasoning
1 Tbsp. of fresh dill, chopped
1/4 tsp. of kosher salt
1/4 tsp. of freshly ground pepper
Directions
- In a large bowl, mix mayonnaise, celery, red onion, avocado, lemon juice, old bay seasoning, dill, salt and pepper. Set aside.
- In a large skillet over medium heat, melt butter. Add lobster and stir continuously until warmed through and butter is all over.
- Use a slotted spoon to remove the lobster from the skillet and add to mayonnaise mixture.
- Toss gently to coat. Serve with endive.
Tips
- 1. * Langostino meat is part of the crustacean family and has a sweet taste similar to maine lobster.
