Smashed Purple Potatoes with Lemon and Red Onion

minutesThese naturally intense purple colored potatoes are beautiful and highly nutritious. Purple potatoes have a mildly sweet and nutty flavor and will definitely impress your guest and even the finicky kids!
Ingredients
2 lbs. of small round purple potatoes
1 lemon cut into thick slices
1/2 red onion, cut into thin slices
3 Tbsp. of olive oil, divided
1 tsp. of kosher salt, more if needed
1 tsp. of lemon pepper seasoning
2 Tbsp. of grated parmesan cheese
1 Tbsp. of fresh rosemary, minced
Directions
- Preheat the oven to 425 degrees. Line baking sheet with parchment paper.
- In a medium size bowl, toss potatoes and red onions, with 2 Tbsp. of olive oil and spread evenly on baking sheet. Add sliced lemons and sprinkle with salt. Roast for 20- 25 minutes or until the potatoes are fork tender.
- Using the bottom of a small glass, gently press down on the potatoes, smashing them to about 1/4 inch thickness.
- In a small bowl, combine juice from roasted lemons, 1 Tbsp. of olive oil and rosemary. Pour over the smashed potatoes. Sprinkle with lemon pepper seasoning and parmesan cheese.
