Strawberry Basil Bellini

minutesSpringtime means strawberry season! We did a fun and delicious twist on a strawberry bellini… plus it’s super pretty! This drink is the perfect cocktail for Mother’s Day, brunch, girl’s night or any night!
Ingredients
2 cups of chopped fresh strawberries
1 cup of fresh basil
1 bottle of prosecco
1/2 cup of peach schnapps
Directions
- Blend strawberries in a blender or food processor.
- Strain through a sieve. Reserve strawberry puree.
- In a large pitcher, add strawberry puree, and fresh basil and muddle to extract the basil flavor. Remove basil after muddling. *
- Add peach schnapps and prosecco stir gently.
- Serve and enjoy!
- Optional: add fun strawberry and basil ice cubes! **
Tips
- 1. * If you have time, allow basil to fuse into strawberries by keeping the mixture refrigerated for 1 hour before removing the basil.
- 2. **Add an extra twist.. make strawberry and basil ice cubes! Simply add chopped strawberries and basil to an ice cube tray. Add water and freeze.
