White Bean and Sausage Soup

It’s soup night! This hearty rustic coup is so satisfying and flavorful. We included whole chickpeas that added a creamy, soft and nutty unexpected deliciousness. The chickpeas are also a wonderful substitution for pasta, even though we used both!

Ingredients

  • 1 lb. of ground sausage

  • 1 cup of celery, chopped

  • 1 cup of carrots, chopped

  • 1/2 cup of onion, chopped

  • 3 cloves of garlic, minced

  • 4 cups of chicken broth

  • One 15.5 ounce can of great northern beans

  • One 15.5 ounce can of chickpeas (garbanzo beans)

  • 1 cup of frozen chopped kale or spinach

  • 1 cup of pasta (we used broken pieces of pappardelle pasta)

  • 1 piece of parmesan rind (optional)

  • 1 Tbsp. of fresh thyme

  • Salt and pepper to taste

Directions

  • In a large pot, add ground sausage and cook over medium-high heat for about 10-12 minutes. Remove from pot and transfer the sausage to a paper towel and lined plate to reduce the grease.
  • Add celery, carrots and onions to the pot. There should be enough fat in the pot from the sausage, but you can add oil if necessary. Continue to cook until they are softened and starting to lightly brown, about 5 minutes.
  • Add garlic and cook for an additional minute.
  • Add the broth and northern beans. Stir to combine and take pot off of the heat. Using an immersion/stick blender, puree the soup (this will help to thicken.) We like to keep some of the vegetables chunky.
  • Return the pot to medium heat. Add the cooked sausage, can of chickpeas, pasta, kale. parmesan rind, thyme and salt and pepper to taste. Cook for a couple more minutes, or until heated up.

Tips

  • 1. Chickpeas are affordable and easy to find at most grocery stores. They are packed with proteins, fiber and an amino acid called tryptophan, which is connected to your well being and mood. (source: Healthline; Joy Bauer)
  • 2. Kale contains more nutrients than most foods! It is loaded with antioxidants and very high in Vitamin C and K!  It is also rich in beta-carotene which promotes cell replacement and may help with preventing wrinkles! (Source: Healthline.com and Joy Bauer)
