Philly Cheesesteak Quesadillas with Roasted Fennel

Here is a perfect recipe for game day! These quesadillas are filled with seared steak, crispy onions and peppers and melted cheeses. Plus we added some caramelized fennel for extra sweetness and additional nutritional value.

Ingredients

  • 1 lb. shaved beef steak (we used trader joe’s)

  • 3 Tbsp. of olive oil, divided

  • 2 Tbsp. of grated parmesan cheese

  • 2 cloves of garlic, minced

  • 1 red or green pepper, thinly sliced

  • 1 onion, thinly sliced

  • 1 fennel bulb, remove stalks, cut into thin slices*

  • 2 tsp. of mayo

  • 4 slices of provolone cheese

  • 8 ounces of shredded cheddar cheese (we use trader joe’s shredded unexpected cheddar cheese)

  • 8 flour tortillas (medium size)

  • Kosher salt and freshly ground pepper to taste

Directions

  • Preheat oven to 400 degrees. Arrange sliced fennel on parchment paper lined baking sheet. Do not overlap the fennel. Combine olive oil and garlic and brush it over the fennel. Sprinkle with parmesan cheese, salt and pepper. Bake for 20-30 minutes or when tender and set aside.
  • Heat olive oil in large skillet over medium-high heat. Add beef, season with salt and pepper. Cook until tender, about 2 minutes each side. Add additional olive oil if meat starts to get dry. Remove and set aside.
  • In the same pan, heat 1 Tbsp. of oil and add peppers and onion. Cook until vegetables are tender, about ten minutes. Set aside.
  • To assemble the quesadilla, spread mayo on one inside of the quesadilla. In a clean skillet, spray with cooking spray. Place outer side of the quesadilla in pan. Layer with meat, peppers, onions, fennel, cheeses. Add another quesadilla on top.
  • Cook until the underside is golden brown, about 3 minutes. Flip and cook an additional 3 minutes or until golden brown.
  • Keep warm in oven until remaining quesadillas are complete. Cut each one into 4 pieces and serve.

Tips and nutritional value

  • 1. * If desired, fennel can be omitted.
