Ingredients
4 seckel pears, sliced into 6 wedges each
1 tsp. of lemon juice
4 ounces of blue cheese, cut into small pieces
12 pieces of thinly sliced prosciutto, cut in half lengthwise
1 Tbsp. of cranberry/pear balsamic vinegar (we used the brand Olive Oil Etcetera)*
Fresh ground pepper
24 small skewers or tooth picks
Directions
- In a large bowl, toss the pears with lemon juice to prevent them from browning.
- Microwave the blue cheese pieces for about 15-30 seconds. This softens the blue cheese which keeps it from crumbling when skewered.
- To assemble, wrap prosciutto around the pear, top with piece of blue cheese and add skewer/toothpick to keep it together.
- Drizzle with vinegar and top with fresh ground pepper.
