Roasted Tomato Soup with Grilled Cheese Skewers

The combination of tomato soup and a grilled cheese sandwich is the definition of childhood memories and comfort food. We roast fresh garden tomatoes and for extra flavor add a couple of twists to make it even better!

Ingredients

  • Tomato Soup
  • 1 Tbsp. of olive oil

  • 4 medium/large fresh tomatoes, quartered

  • 1 small onion, quartered

  • 3 garlic cloves, unpeeled

  • One 14 ounce can of diced tomatoes (we used fire roasted)

  • One 15 ounce can of garbanzo beans, including liquid

  • 2 cups of chicken or vegetable broth

  • 1 Tbsp. of balsamic vinegar

  • 1 tsp. of maple syrup

  • 1/2 tsp. of dried oregano

  • 1 Tbsp. of fresh thyme

  • 1/4 cup of half and half

  • 1 tsp. of kosher salt, more if needed

  • 1 tsp. of freshly ground pepper

  • Grilled Cheese Skewers
  • 8 skewers (5-6 inches)

  • 4 dinner rolls*

  • 4 thick slices of manchego cheese

  • 1 Tbsp. of olive oil

  • 8 cherry tomatoes

  • 4 slices of prosciutto, broken into pieces

Directions

  • Tomato Soup
  • Preheat oven to 400 degrees, Line a baking sheet with parchment papper.
  • Place tomatoes, onions and garlic on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 25-30 minutes or until vegetables start to brown. Peal garlic and set vegetables aside.
  • In a large soup pot, add roasted vegetables, diced tomatoes, garbanzo beans, broth, vinegar, maple syrup, oregano, thyme, salt and pepper. Using an immersion blender, mix until creamy. Gently stir in half and half and add additional salt if needed. Bring soup to a simmer and cook for an additional 20 minutes or until warm.
  • Grilled Cheese Skewers
  • Slice rolls in half and place cheese inside. Cover with top of roll and generously brush with olive oil. Bake in oven for about 10-15 minutes or until the rolls are toasted and cheese is melted. Cut into quarters, set aside.
  • Heat 1 Tbsp. of olive oil in small pan. Saute cherry tomatoes for about 10 minutes or until soft.
  • Assemble all the ingredients on skewers. Serve with soup.

  • 1. We used Pepperidge Farm frozen multi-grain dinner rolls, thawed.
