Cobb Salad with Healthy Smokey Ranch Dressing

minutesA classic Cobb salad is a protein-packed salad that can be a meal in itself. It’s full of flavor and color and it is the perfect salad to serve a crowd. Our creamy smokey ranch dressing makes it even more delicious.
Ingredients
- Salad
8 cups of shredded romaine, chopped
5 ounce bag of butter lettuce
2 cups of sliced cherry tomatoes
2 cups of ripe avocados cut into 1/2 inch pieces
6 hard-boiled eggs, cut in quarters
2 cups of kalamata olives, pitted
2 cups of mini seedless cucumbers, sliced & halved
2 cups of crispy bacon, broken into bite size pieces
2 cups of cheese (we used Colby Jack)*
2 Tbsp. of chopped fresh chives
Kosher salt and ground pepper to taste
- Dressing
1 cup of plain greek yogurt
1/3 cup of buttermilk
1 clove of fresh garlic, minced
1/2 tsp. of onion powder (we used Trader Joe’s Onion Salt)
1 tsp. of smoked paprika (we used Trader Joe’s)
Juice of half a lime
1 Tbsp. of fresh dill, finely chopped
1 tsp. of kosher salt
1/2 tsp of fresh ground pepper
Directions
- Salad
- In a large serving platter, add mix of lettuce.
- Arrange tomatoes, avocados, eggs, olives, cucumbers, bacon and cheese on top of lettuce.
- Top with chives, salt and pepper.
- Serve with dressing.

- In a medium bowl, whisk all ingredients together.
- Store in a jar or bowl with a lid in the fridge for up to 2 weeks.
