Grilled Vegetable Skewers

minutesSupport your local farmers!!! Veggie skewers are the perfect recipe following a trip to the local farmers market. We also used a flavored olive oil and a combination of herbs that we grew in our own garden to create a delicious herb sauce for the skewers. There is nothing better than the flavors of fresh vegetables and when the colors are combined on a skewer they become a work of art!
Ingredients
- For The Vegetable Skewers
4 small Japanese eggplants, sliced
2 red peppers, cut into 2″ pieces
2 orange peppers, cut into 2″ pieces
2 small yellow squash, thinly sliced
2 small green squash, thinly sliced
2 Tbsp. of cotija cheese, shredded
8-10 wooden skewers
- For the Herb Sauce
1/3 cup of olive oil (we used Extra Virgin & Sticky situations Basil Fennel Olive Oil)*
2-3 cloves of fresh garlic, minced
2 Tbsp. of fresh basil, chopped **
1 Tbsp. of fresh oregano, chopped**
1 Tbsp. of fresh lemon balm, chopped**
2 Tbsp. of kosher salt
Fresh ground pepper to taste
Directions
- Soak wooden skewers in water for at least 30 minutes. This keeps the skewers from burning immediately.
- Preheat grill to medium/high heat
- Prepare the herb sauce. In a small bowl, whisk together olive oil, garlic, herbs, salt and pepper. Set aside.
- Skewer the vegetables by alternating all the vegetables. Brush the skewers with olive oil.
- Add skewers to grill and cook for approximately 6 minutes per side or until vegetables are browning around the edges.
- Remove from heat. Brush with additional herb sauce and sprinkle with cotija cheese.
