Fresh Blueberry Margarita with Mint

Sweet summer blueberries are a perfect ingredient to make a delicious and beautiful cocktail.

Ingredients

  • 1 cup of fresh blueberries

  • Juice of one lime

  • 1/4 cup of pom juice (optional)

  • 5 ounces of tequila (we recommend using a 100% agave brand)

  • 3 ounces of cointreau or good quality triple sec

  • 2 Tbsp. of agave*

  • 6-8 sprigs of fresh mint

Directions

  • In a blender, combine blueberries, lime juice, pom juice, tequila, cointreau and agave. Pulse several times until all ingredients are blended. Set aside and allow to infuse for about 20. minutes.
  • Pour mixture into a bowl, add the mint and muddle together.
  • Pour the mixture through a fine mesh sieve into a small pitcher with ice. Make sure to press the mixture to get all the liquid out.
  • If desired, rub the rim of the glass with wedge of a lime and dip into salt, then pour drink into the rimmed, ice filled glasses. Garnish with mint and/or blueberries.

Tips

  • 1. *If you like a spicy margarita, substitute Mike’s hot honey for the agave.
  • 2. Recipe can be doubled or tripled for additional drinks!
