Grilled BBQ Pork Tenderloins with Curried Tomato Peach Relish

Ingredients
2 pork tenderloins (1 3/4 to 2 lbs total)
1 cup of barbecue sauce (we used Trader Joe’s Organic Kansas BBQ Sauce)
1 Tbsp. of vegetable oil
2 large tomatoes, diced
3 firm-ripe peaches, diced
1/2 cup of red onion, chopped
1 Tbsp. of peeled minced fresh garlic
1 1/2 tsp. of curry powder
1/2 tsp. of cinnamon
1 tsp. of kosher salt
2 Tbsp. of honey (we used Trader Joe’s Honey Aleppo sauce)
1 Tbsp. of lime juice
1 Tbsp. of fresh rosemary, chopped
Directions
- Place tenderloins in a large ziplock bag and cover with BBQ sauce. Refrigerate for 4 hours or overnight.
- Prior to cooking, set the pork tenderloins out at room temperature for 30 minutes.
- Prepare the grill to high heat (400-500 degrees.) Remove the pork from the sauce and place on grill. Cover grill and cook, turning occasionally, until all sides are charred and meat registers. (45 degrees-approximately 20 minutes.)
- While pork is cooking, prepare relish.
- Heat oil in a medium saucepan, cook onion, ginger and salt until softened 3-4 minutes. Add curry powder and cinnamon and cook an additional 1 minute. Add peaches, tomatoes, honey, lime juice and rosemary. Continue to cook until peaches and tomatoes are tender- approximately 10-12 minutes.
- Slice grilled tenderloin and serve with relish.
