Bacon Wrapped Hot Honey Glazed Carrots

This recipe is perfect anytime of the year but during late/early summer carrots are fresh, sweet and tender and can be found at your local farmers market. They can be served as an appetizer or a side dish. Plus … they are wrapped in bacon!

Ingredients

  • 1 lb. of fresh carrots (we used multi-colored)

  • 1/2 lb of thin-sliced bacon

  • 1/4 cup of mike’s hot honey *

  • 1 Tbsp. of fresh thyme

Directions

  • Preheat oven to 400 degrees.
  • Place uncooked bacon on a baking sheet and cook for about 7 minutes. Place bacon on paper towel to drain before wrapping around carrots.
  • Once cooled, wrap slice of bacon around each carrot, starting at the thick end of the carrot.
  • Spray wire rack with cooking spray and place carrots on rack.
  • Bake for 20-25 minutes or until carrots are tender and bacon is crispy.
  • Remove from oven and brush hot honey on all sides. Bake for additional 5 minutes.
  • Toss with fresh thyme.

  • 1. Carrots are a very good source of beta-carotene which is an antioxidant that your body converts into vitamin A. Vitamin A promotes good vision and an important role in boosting immunity.
