Everyone loves a cake pop.. the perfect bite size dessert! We use a store-bought cake mix to make it easier but we make homemade cream cheese frosting to make it taste incredible. Your guests will be so impressed. You can also wrap them up individually and give them to guests as party favors.

Ingredients

  • 1 cake mix box of your favorite cake, plus the required ingredients on the back of the box

  • 4 ounces of cream cheese, room temperature

  • 2 ounces of butter, room temperature

  • 6 Tbsp. of powdered sugar

  • 1 tsp. of pure vanilla extract

  • Two 10 ounce package of ghirardelli melting wafers (we used dark chocolate and vanilla)

  • 18-20 6 inch lollipop sticks

  • Assorted nonpareil sprinkles

  • Styrofoam block to hold the cake pops upright with drying

Directions

  • Preheat oven to 350 degrees. Line 9×13 cake pan with foil.
  • Prepare cake following the directions on the box. Pour cake mix into cake pan and bake according to recommended cooking time. Allow to cool
  • While cake is baking, prepare frosting. Add softened cream cheese and butter to a medium size bowl, using beaters mix until creamy. Add powdered sugar and vanilla extract, stir to combine. Then turn the mixer on high speed and beat until the frosting is fluffy.
  • In a large bowl, crumble cooled cake. Add frosting into crumbled cake until mixture is combined. Refrigerate until chilled, for at least 30 minutes.
  • Using a 1.5 Tbsp. cookie scoop, roll cake mixture into 1 1/2 inch balls and place on wax paper lined baking sheet.
  • Melt chocolate in a microwave- safe bowl for 30 second intervals, Be sure to take the bowl out of the microwave in between intervals and stir the chocolate around. Do not over melt it.
  • Dip the tip of the lollipop stick into the melted chocolate and push the stick halfway into each ball of cake mixture. This step is important because the melted chocolate helps glue the stick to the cake. Refrigerate for about 30 minutes until chocolate has hardened.
  • Gently dip the cake pop into melted chocolate (remelt chocolate for 15-20 seconds if necessary) until fully submerged. Tap until excess chocolate drips off. Immediately cover with sprinkles before chocolate dries.
  • Place upright in a styrofoam block to harden.

Tips

  • 1. To display the cake pops in an Easter basket, wrap 1/2 styrofoam ball in a plastic wrap. Place the cake pops into the styrofoam ball until all are evenly spaced. Add paper grass to cover the styrofoam ball.
  • 2. Another serving option, place paper grass on platter and place cake pops on top.
