Irish Soda Bread Biscuits with Jalapeno

minutesWe combined currants and jalapenos and added them to our favorite biscuit recipe to create an amazingly delicious sweet and spicy biscuit. Perfect any time of the year, but especially good with green beer on St. Patty’s Day.
Ingredients
1 1/2 cups of unbleached all-purpose flour
1/4 tsp. of baking soda
2 tsp. of baking powder
1/2 tsp. of salt
6 Tbsp. of butter
3/4 cup of buttermilk
2 jalapenos, diced
3/4 cup of currants
Directions
- Preheat oven to 400 degrees.
- Line muffin pan with parchment paper or spray with cooking spray.
- In a large mixing bowl, add flour, baking soda, baking powder and salt. Mix together until combined. Make a well in the center and set aside.
- Melt butter in microwave until it’s about 3/4 of the way melted. Remove and whisk until completely melted.
- Add buttermilk to butter and combine. Mixture will be clumpy.
- Pour buttermilk mixture into well of flour mixture. Using a rubber spatula, gently combine mixture. Add the jalapenos and currents and continue to mix to combine.
- Spray a 1/4 cup ice cream scooper with cooking spray. Scoop dough and add to muffin tins.
- Bake about 17-22 minutes or until golden brown.
