Stone Fruit and Tomato Caprese Salad with Lemon Thyme Vinaigrette

A caprese salad is a simple Italian salad, typically made with fresh mozzarella and tomatoes. We made a couple of changes by adding delicious summer fruit and crispy prosciutto and used creamy burrata cheese. This version will become a staple in your summer/early fall entertaining.

Ingredients

  • For the Salad
  • 4 slices of prosciutto

  • 3 cups of mixed greens (we used spinach and arugula)

  • 1 pint of cherry tomatoes, sliced in half (we used multi-colored tomatoes)

  • 2 plums, sliced

  • 1 peach, sliced

  • 1-1 1/2 cups of cherries, pitted

  • 8 ounces of fresh burrata

  • Kosher salt and freshly ground pepper to taste

  • 1/2 cup of fresh basil, torn into pieces

  • For the Vinaigrette
  • 1/3 cup of Extra Virgin Olive Oil (we used California Olive Ranch)

  • 2 Tbsp. of fresh lemon juice

  • 2 Tbsp. of white balsamic vinegar (we used Alessi white BV)

  • 1 tsp. of honey (we used Sue Bee Pure Clover Honey)

  • 1/4 tsp. of salt

  • 1 Tbsp. of fresh thyme

Directions

  • Salad
  • Heat oven to 400 degrees. Line baking sheet with parchment paper.
  • Break prosciutto slices into small pieces and place on baking sheet. Bake for 7-10 minutes, or until crispy.
  • On a large platter, layer with greens, tomatoes, fruit, prosciutto, burrata and basil.
  • Drizzle with vinaigrette and top with salt and pepper.
  • Vinaigrette
  • In a small bowl, whisk together lemon juice, white balsamic, honey, salt and pepper. Drizzle in olive oil while whisking. Add fresh thyme.

  • 1. Fun fact – a tomato is actually a fruit!! Tomatoes are a good source of many vitamins and antioxidants, including vitamin C and K, potassium and folate.
  • 2. Peaches don’t get enough attention!! They are loaded with nutritional benefits. Peaches are rich in antioxidants and vitamins C and A. They also contain fiber which contributes to healthy digestion.
