Roasted Cauliflower and Bacon Nachos

What’s better or easier than a tray of nachos to serve your guests on a summer night! You just need to include some margaritas! Of course we also added some delicious queso cheese to make this recipe super prefect!

Ingredients

  • Nachos
  • 1 head of cauliflower, cut into small pieces

  • 3 Tbsp. of olive oil

  • 1 package of bacon, (we used Trader Joe’s, Apple Smoked Bacon)

  • One 16 oz bag of white corn tortilla chips (we used Trader Joe’s)

  • 1 Avocado, diced

  • 2 medium sized tomatoes, diced

  • 1 cup of cilantro, chopped

  • 1 cup of queso cheese (see recipe below)

  • Queso Cheese
  • 2 Tbsp. of olive oil

  • 1 small onion, chopped

  • 1 jalapeno pepper, minced

  • 2 garlic cloves, minced

  • 12 oz. of american cheese, shredded *

  • 6 oz. of pepper jack cheese, shredded

  • 2/3 cup of whole milk

  • 1/4 tsp. of kosher salt

  • 1/4 tsp. freshly ground pepper

Directions

  • For the Nachos
  • Preheat oven to 425 degrees.
  • Toss cauliflower pieces with olive oil and spread on a baking sheet. Bake for 30-40 minutes or until soft and caramelized.
  • Line another baking sheet with parchment paper. Add bacon and cook for approximately 30 minutes or until crispy. Allow to cool and break into pieces.
  • On a large tray, spread corn chips. Add cauliflower, bacon, avocado, tomatoes, and cilantro. Drizzle with Queso cheese.
  • For Queso Cheese
  • Heat oil in a large skillet over medium heat. Add onion and cook approximately 5-7 minutes or until soft. Add jalapeno and garlic and cook an additional 2-3 minutes. Add cheese and milk, and salt and pepper and continue to cook until cheese is melted.

  • 1. *If you can’t find shredded american cheese, just chop sliced american cheese into small pieces.
  • 2. Cauliflower is high in Vitamin C and K and has a high amount of antioxidants, which are beneficial for reducing inflammation.  (source: Healthline & Joy Bauer)
