Dinner on a stick! During the summer months..the more we can put on the grill the better. This recipe requires a little pre-cooking before grilling, but overall is an easy delicious dinner for busy summer nights or entertaining.

Ingredients

  • 2 lbs of spicy or mild sausage

  • 1 can of beer

  • 4 large peppers, cut into 1 inch pieces ( we used yellow, red and orange)

  • 1 large red onion, cut into 1 inch pieces

  • 1 lb. of small potatoes

  • 1 lb. of fresh pineapple pieces

  • 1 bunch of sage leaves

  • 1 cup of BBQ sauce (we used Trader Joe’s Sweet Spicy Pineapple BBQ Sauce)

  • 8-10 12″ wooden skewers

Directions

  • Soak skewers in water for at least 1 hour prior to grilling. This will help prevent the skewers from burning up completely.
  • Place sausage in a pot, add beer and enough water to cover the sausage one-two inches. Bring the water to a boil over medium heat, continue to cook for an additional 10 minutes. Allow to cool and slice into 1 inch pieces.
  • Add small potatoes to medium pot, cover with water. Cook 12-15 minutes or until tender. Drain from water.
  • Preheat outdoor grill for high heat and lightly oil the grates.
  • Alternatively thread sausage, peppers, onion, potatoes, pineapple and sage leaves on skewers. Brush them generously with BBQ sauce. Cook on the grill for 3-4 minutes on each side or until veggies are lightly charred.

Tips and nutritional value

  • 1. Any brand or flavor of BBQ Sauce will work.
  • 2. The benefits to eating pineapple are very impressive. They are especially rich in Vitamins C and
Magnesium and disease-fighting antioxidants. (source: Joy Bauer & Healthline)
  • 3. Pineapples contain a high amount of water which can help you rehydrate. (source: Joy Bauer & Healthline)
