minutesWhat is better than pasta and cheese…. even if it’s veggie noodles! We made this recipe healthier by using zucchini and butternut squash spiral noodles. A quick and delicious recipe!
Ingredients
12 oz. zucchini noodles (we used Wegmans frozen noodles)
12 oz. butternut squash noodles (we used Wegmans frozen noodles)
3 Tbsp. of butter
1 tsp. of freshly cracked lemon pepper (we used Trader Joe’s)
1/3 cup of grated parmesan cheese
1/3 cup of grated pecorino romano cheese
Directions
- Cook zucchini, butternut squash noodles in microwave according to package. Set aside.
- In a large pan, melt butter. Add the lemon pepper and toast for 1-2 minutes.
- Add zucchini and butternut squash noodles in to pan.
- Toss gently with cheese.
