Lobster is a deletable summer indulgent that we enjoy as much as possible. This recipe includes a little bit of butter…which is sometimes the best part of eating lobster!

Ingredients

  • 2 heads of Belgian endives, bottoms trimmed and leaves separated

  • 12 ounces of chopped lobster meat (we used Trader Joe’s Langostino Tails)*

  • 3 Tbsp. of butter

  • 1/4 cup of mayonnaise

  • 1/4 cup of celery, minced

  • 1/4 cup of red onion, finely diced

  • 1/2 of an avocado, cubed

  • 1 Tbsp. of lemon juice

  • 1/2 tsp. of old bay seasoning

  • 1 Tbsp. of fresh dill, chopped

  • 1/4 tsp. of kosher salt

  • 1/4 tsp. of freshly ground pepper

Directions

  • In a large bowl, mix mayonnaise, celery, red onion, avocado, lemon juice, old bay seasoning, dill, salt and pepper. Set aside.
  • In a large skillet over medium heat, melt butter. Add lobster and stir continuously until warmed through and butter is all over.
  • Use a slotted spoon to remove the lobster from the skillet and add to mayonnaise mixture.
  • Toss gently to coat. Serve with endive.

Tips

  • 1. * Langostino meat is part of the crustacean family and has a sweet taste similar to maine lobster.
