Guacamole with Cotija Cheese

Is there anything better than fresh guacamole? (and a margarita… of course!) The base of our version is authentic and simple but we added a couple of delicious twists to make the recipe extra special.

Ingredients

  • 3 ripe avocados

  • 4 campari tomatoes, diced*

  • 1/4 red onion, finely chopped

  • 1/2 poblano pepper, chopped**

  • 2 fresh garlic cloves, minced

  • 1 lemon, juiced

  • 1/2-1 tsp. of kosher salt

  • 1/3 cup of shredded cotija cheese

  • 1/4 cup of cilantro, chopped

Directions

  • Slice the avocados in half, remove the pit and scoop out the flesh into a bowl. Mash the avocado with a fork.
  • Add remaining ingredients and gently stir together.
  • Serve with tortilla chips.

Notes

  • 1. * Any variety of tomatoes will work.
  • 2. ** Any variety of pepper will work. Use jalapeno if you like it spicer.
  • 3. Avocados are high in heart healthy monounsaturated fatty acids. Studies have proven that eating avocados can improve heart disease and cholesterol .
