Guacamole with Cotija Cheese

minutesIs there anything better than fresh guacamole? (and a margarita… of course!) The base of our version is authentic and simple but we added a couple of delicious twists to make the recipe extra special.
Ingredients
3 ripe avocados
4 campari tomatoes, diced*
1/4 red onion, finely chopped
1/2 poblano pepper, chopped**
2 fresh garlic cloves, minced
1 lemon, juiced
1/2-1 tsp. of kosher salt
1/3 cup of shredded cotija cheese
1/4 cup of cilantro, chopped
Directions
- Slice the avocados in half, remove the pit and scoop out the flesh into a bowl. Mash the avocado with a fork.
- Add remaining ingredients and gently stir together.
- Serve with tortilla chips.
Notes
- 1. * Any variety of tomatoes will work.
- 2. ** Any variety of pepper will work. Use jalapeno if you like it spicer.
- 3. Avocados are high in heart healthy monounsaturated fatty acids. Studies have proven that eating avocados can improve heart disease and cholesterol .
